Salmon and green papaya salad

A refreshing take on the papaya salad – this salmon and coconut combo is sure to be on high rotation.

 

And it’s full of good fats and vitamins, making this nutritious and filling salad super healthy too.

Serves: 2

Ingredients:

1 small green papaya, halved and cut into long thin strips

1 red onion, very finely sliced

1/2 bunch coriander, washed, leaves and stalks, finely chopped

150g salmon sashimi

1 tbsp salmon pearls

Dressing:

1 tbsp coconut cream

1 tbsp coconut nectar

1 tbsp coconut oil

3 kaffir lime leaves, shredded

1 tbsp soy sauce

1 tbsp dark soy sauce

½ red chilli, deseeded and sliced

 

Directions:

To make the dressing, add all ingredients (for the dressing only) into a blender and blitz until combined.

Add the shredded papaya, red onion and coriander to a bowl and toss to combine. Add enough dressing to the salad to coat.

Place in serving bowls and top with pieces of sashimi and a scattering of salmon pearls. Add a few more teaspoonfuls of dressing to taste and serve immediately.
